Can I ad an internal backup drive and later put it in an enclosure and use it on other computers without loosing all the data on it? I have read that most of the ready made external drives have pretty lame software on them.

i don’t know that you can do it that way, unless it’s a lptop of course. however if it’s speed that worries you, there are one touch backup drives (maxtor comes to mind), and the other option is to make sure you have an external sata port and then use an external sata port (gives you internal hdd type speeds.

I have acquired a Canon XL2 camcorder for making short films and the like. I’d like to buy a good external mic for recording dialogue and so on, but can’t afford to spend more than about £250-£300 tops, including windshield, pole etc (although I’m happy to buy 2nd hand).

At that price range you can’t do wireless mics, so that’s out of the question. So you will have to go shotgun and boom.
